We were testing out a new segment here on WMOM and thanks for your paitence. We are working on additional cameras and audio feeds to bring you this segment in the future. We are cooking with new segment here on WMOM. In the studio is the owner of Hansen Foods in Hart Dave Hansen. It’s a new segment here on the radio and online. Today we’re making Bucatini a l’amatriciana.Ingredients:3 Tablespoons Extra Virgin Olive Oil4 Ounces Pancetta, cut in 1 x ¼ inch strips1 garlic clove, peeled and chopped¼ teaspoon crushed red pepper flakes1 cup finely chopped onion2 Tablespoons balsamic vinegar1 lb. cherry tomatoes cut in ½ 12 ounces bucatini (like spaghetti with a hole down the middle) Giuseppe Cocco is the brand I prefer. It is the same brand used in the Vatican. There is a difference. (Across from the deli)¾ cup freshly grated Pecorino Romano (like Locatelli)Method: This quick, simple recipe can be made in about 15 minutes!1. Put a large pot of salted water on to boil for the pasta.2. Heat 1 tablespoon of oil in a heavy skillet over low to medium heat. Add ½ of the guanciale and sauté until crisp. Be careful because the guanciale rendering has a low burning point. Transfer the guanciale to paper towels to drain. Reserve for garnish.3. In same skillet with renderings and oil, add remaining 2 tablespoons of olive oil and add garlic and red pepper flakes; sauté until garlic is done; being careful not to burn the garlic. (about 2 minutes)4. Add onion and remaining guanciale and sauté until onion is translucent and fate has rendered from the guanciale. Stir in vinegar and cook for a minute.5. Add tomatoes and simmer for about 6 minutes. Season with salt and pepper.6. Meanwhile, cook pasta until tender, but still firm to the bite. Drain, reserving 1 cup pasta cooking water. Return pasta to same pot.7. Add the sauce and cheese and toss, adding some of the reserved pasta water if too dry. Transfer pasta to bowl and sprinkle with more cheese and the reserved guanciale. ...
